Many people think chocolate ganache and chocolate truffles are the same, while they are related, they’re actually different. Both are made with chocolate and use similar ingredients, but they have different textures and uses.

So, what’s the difference between a ganache and a truffle? At CocoTerra we think that knowing how each one is made and when to use each can help you make better chocolate desserts.

Whether you’re filling a cake, frosting cupcakes, or making homemade chocolates, here’s everything you need to know about chocolate ganache vs. chocolate truffles.

What is chocolate ganache?

Ganache is made by combining chocolate and heavy cream, gently heating the cream, pouring it over the chopped chocolate, and whisking until the chocolate is completely melted and blended smoothly.

Ganache can be soft or firm, depending on the ratio of cream to chocolate. Adding more cream results in a softer ganache, which is ideal for filling molded chocolates and frosting cakes or cupcakes. Including more chocolate makes a firmer ganache that, when refrigerated, solidifies into a dense paste. This firmer ganache is commonly shaped into balls and coated with cocoa powder to craft delectable truffles.  In short, ganache is the main ingredient used to make truffles.

The basic ganache can be as simple as chocolate and cream, but ganache can also include butter, vanilla, coffee, liqueurs, or spices for extra flavor.

Ganache uses in pastry and confectionery

Ganache is incredibly versatile. It can be used as:

  • Cake filling
  • Cake Frosting
  • Glaze
  • Tart filling
  • Macaron filling
  • Dessert sauce
  • And of course… truffle filling!

What is a chocolate truffle?

A chocolate truffle is a small, bite-sized chocolate treat made from firm ganache. The ganache is chilled, rolled into balls, and coated with cocoa powder, chopped nuts, coconut, or tempered chocolate.

Chocolate truffles get their name because they look like truffle mushrooms.

Classic chocolate truffle ingredients include:

  • Chocolate (for example, your favorite CocoTerra recipe)
  • Heavy cream
  • Butter (optional)
  • Flavorings like vanilla, coffee, citrus zest, or liqueurs
  • A coating such as cocoa powder, nuts, or coconut flakes

Today, there are many types of chocolate truffles. Some follow the traditional French recipe, while others are filled with caramel, fruit purées, spices, or nuts.

Chocolate ganache & chocolate truffle

Although chocolate truffles start with ganache, there are only certain ganache recipes that are ideal for making truffles.

Ingredients ratio

Both ganache and truffles are made from chocolate and cream. The main difference is the amount of each ingredient used. Ganache can be soft and pourable, or firm, depending on how much cream is added.

For chocolate truffles, a typical ganache ratio is 2:1 chocolate to heavy cream for dark chocolate, creating a firm texture that can be scooped, rolled into balls, and hold its shape at room temperature or when chilled in the refrigerator.

Texture and consistency

Ganache has a smooth, creamy texture that ranges from fluid to spreadable.

Chocolate truffles have a soft, melt-in-your-mouth center surrounded by a coating that provides contrast and texture.

Final Thoughts: Understanding ganache and truffles in chocolate making

When comparing chocolate ganache and chocolate truffles, it’s important to know that they are closely connected but only certain ganaches can be used for truffles.

Whether you’re making a rich ganache filling for a cake or trying different types of chocolate truffles, both start with one important ingredient: high-quality chocolate.

Making your own chocolate from cocoa beans gives you full control over the flavor, cocoa percentage, and ingredients, so you can create delicious desserts just the way you like them.

Using freshly made chocolate from a bean-to-bar machine like CocoTerra gives you even more control over flavor, allowing the natural characteristics of the cocoa beans to shine in both ganache and truffles.
