Before we get to some solutions, let’s discuss what happens when you accidentally melt your delicious chocolate bar.  

When chocolate is melted, it undergoes a phase transition from solid to liquid. The cocoa butter molecules lose their crystal structure and the chocolate loses its “temper”. This is why melted chocolate can appear dull and feel soft after it firms up again..  Your chocolate has lost its structure.

It’s important to note that when chocolate loses its temper, while its texture and appearance may change, the taste and flavor remain unchanged. The untempered chocolate may have a softer, greasier texture and appear matte rather than glossy. It may also take longer to solidify and can develop streaks or bloom upon cooling.

You can restore the temper to melted chocolate by re-tempering it. To do this, the chocolate is heated to a specific temperature and then cooled under controlled conditions while gently stirring it. This process encourages new cocoa butter crystals to reform in a stable structure, restoring the desired texture, appearance, and snap to your chocolate.

Is there a difference between a melted chocolate bar and melted chocolate confections?

There is a difference between melted chocolate bars and melted chocolate confections. The main difference is in their composition, structure, melting point, texture and intended use. Melted chocolate bars have simpler structures, with a higher melting point than melted chocolate confections which have more complex fillings and lower melting points.  Melted chocolate bars are easier to salvage than melted chocolate confections.

What to do if I melted my chocolate?

If your chocolate melts, don’t worry! You can use it in lots of different ways. Here’s your first plan of action: if the chocolate is still melted, allow it to solidify at room temperature or put it in the refrigerator for a quick fix. Once solidified, break it into pieces or chunks.

3 solutions to fix melted chocolate

  • If your favorite chocolate bar melted, you can always retemper it to get it back to its original state.  Again, the only difference between the beautiful bar that you bought and the solid mess is that the chocolate lost its temper.  You can read more about tempering on our post about how to temper chocolate.
  • If dealing with melted chocolate confections (like truffles and other filled chocolate creations), you can cut them up into chunks and roll them into small balls and coat them with cocoa powder, crushed nuts or sprinkles to create homemade truffles. Put them in the refrigerator to firm up before enjoying them.
  • You can melt the chocolate and then dip fresh fruits like strawberries, bananas, or oranges in melted chocolate. You can also dip pretzels, cookies, or marshmallows for a delicious treat. Let the dipped items cool and set them on a parchment-lined tray.
  • You can use melted chocolate as a sauce for ice cream, pancakes, waffles or any dessert of your choice. Drizzle it over the dish or serve it on the side for dipping.  If you want to make a chocolate shell coating for ice cream, here’s a simple recipe to do the trick.
  • If you have a recipe that calls for chocolate, you can still use your previously melted chocolate in the recipe.
