What are chia seeds?

Chia seeds are small, oval-shaped seeds harvested from the chia plant. Nutritionally, chia seeds are packed with fiber, omega-3 fatty acids, protein, antioxidants and various vitamins and minerals. They are particularly known for their high fiber content which helps promote digestive health and may contribute to feelings of fullness. Chia seeds have a unique property where they can absorb liquid and develop a gel-like texture when mixed with a liquid; this gel-like consistency is what makes chia seeds a popular ingredient in recipes like chia pudding smoothies and baked goods.

Chocolate chia pudding

Chocolate chia pudding is a creamy, indulgent dessert made with chia seeds, cocoa powder or melted chocolate, liquid (such as milk or a plant-based alternative), and sweetener. When soaked in liquid, chia seeds absorb it and create a thick gel-like texture. The addition of cocoa powder or melted chocolate gives the pudding a rich chocolatey flavor.

Health benefits of chocolate chia pudding

Chia seeds are rich in nutrients including fiber, omega-3 fatty acids, protein, calcium, magnesium, and antioxidants. When combined with cocoa powder or melted chocolate (the primary sources of chocolate flavor in this pudding) antioxidant-rich flavonoids like those found in cocoa powder can be absorbed into your bloodstream. These antioxidants have been associated with several health benefits including reducing oxidative stress and protecting against chronic diseases like heart disease.

Chocolate chia pudding 

This recipe is fairly flexible and you can adjust the sweetness and consistency to suit your preferences. You can also experiment with adding different flavors like vanilla extract, cinnamon, or a pinch of sea salt to enhance the taste. 

Ingredients:

  • 1/4 cup chia seeds
  • 2 tablespoons cocoa powder (unsweetened) 
  • 2 tablespoons of maple syrup
  • 1 cup milk (dairy or plant-based)

Method

  • In a jar, mix together the chia seeds, cocoa powder and maple syrup.
  • Pour the milk slowly while stirring continuously to prevent clumps from forming. Make sure all the chia seeds are submerged in the liquid.
  • ​​Cover the jar and refrigerate for at least 2-3 hours or overnight. The chia seeds will absorb the liquid, turning into a pudding-like consistency.
  • Serve the chocolate chia pudding with your favorite toppings, such as sliced fruits, nuts, shredded coconut, or a drizzle of nut butter.

Your homemade chocolate chia pudding is ready to be enjoyed immediately, or you can refrigerate it for later! The pudding will keep well in the refrigerator for up to 3-4 days.
